Ingredients
- 1 cup unsweetened soymilk, refrigerated
Soy products are rich in isoflavones and soy protein, and have been shown to reduce LDL-cholesterol (Jenkins et al., 2019).
- ½ avocado
Avocados are rich in phytosterols and fiber, and have been shown to reduce LDL-cholesterol (Wang et al., 2015).
- ½ cup cooked pearl barley, cooled (could substitute with ¼ uncooked rolled oats)
Barley is rich in a type of soluble and viscous fibre called beta-glucan, and has been shown to reduce LDL-cholesterol (Behall et al., 2004).
- 1 oz pistachios
Pistachios are rich in phytosterols and polyunsaturated fats, and have been shown to reduce LDL-cholesterol (Gebauer et al., 2008).
- 1 teaspoon cinnamon
Cinnamon has been shown to reduce LDL-cholesterol (Khan et al., 2003).
- Vanilla extract to taste
Directions
- Place cooked barley (or rolled oats) and pistachios in a blender, and blend until fine.
- Add soymilk, avocado, cinnamon, and vanilla extract to taste. Blend until smooth.
- If too thick, add soymilk to dilute.
- Serve while cold.
